Sumac has a distinctive Middle Eastern inspired decor in the transition. Sumac's Moroccan influences include dark hand etched wooden floorboards, a vibrant fuchsia colour scheme featuring rich, sumptuous fabrics, dark metal latticework and traditional Moroccan hanging lamps. A dramatic floor to ceiling cream curtain sweeps along one side of the room, and a bronze mirrored bar stands at one end.

Sumac offers a Middle Eastern culinary experience which will not disappoint. The gently spiced Middle Eastern influenced menu created by the Atlantic Group [v]'s Executive Chef, Dan Shanks ensures Sumac lives up to the example set by the land of its inspiration. The menu includes an extensive array of plated dishes as well as an exciting mix of food stations and bars designed to make the food a defining feature. To complement the mouth-watering fare, in-house sommelier Simon Rose has developed a wine list that includes varieties from large and boutique wineries throughout Australia and New Zealand
